When our wine arrived the mystery was solved this is a seriously smooth red with lots of legs. It had too much of a kick to it. Shiraz fruit greets the front palate while Merlot plays a traditional role filling out the mid-palate. The Cabernet Sauvignon is fermented in static, stainless steel and pump-over tanks at relatively warm ferments. Half of the blend is given extended skin maceration before being drained and pressed into 50% new and 50% one year old oak for a period of 2 years.
